Shallot Steak Sauce
Cook Time: 20 Minutes Culinary Skill: Easy  

2 Shallot Sliced
3-4 tbsp light olive oil
1 garlic clove, crushed
sprig of rosemary
5 tbsp balsamic vinegar
1 1/2 cups of red wine
1 1/2 cups of beef stock
1/4 cup of unsalted butter cut into cubes
Sauté the shallots in a saucepan with olive oil over high heat until lightly brown, stir often..Season with fresh black pepper, add garlic and rosemary. Stir base to keep shallots from burning.

Pour vinegar and cook until evaporate away into a syrup, then pour in the wine and cook until reduced by 2/3.

Pour in stock and bring to boil. Turn down heat and simmer until reduce by 2/3 again. Remove garlic, rosemary. Add salt to taste and lastly whisk in unsalted cubes of butter. Add juices from steaks just before serving.
