Fettuccini with Alfredo
Fettuccini with Alfredo Sauce
Cook Time: 25 min Culinary Skill: Medium  



1 Package of Fettuccini Noodles
1 tbsp Olive Oil (Extra Light)
1 tbsp Garlic
2 Cups Heavy Whipping Cream
1 Cup of Parmesan Cheese (use cheese high quality cheese!)
Cook Fettuchin in in pot of water until al dente Grade the Parmesan Cheese and set aside.

Heat oil under medium heat, and add crushed garlic until garlic is very lightly brown.

Add heavy whipping cream, and reduce by half. Add Parmesan cheese a little at a time by whisking in the graded cheese. Once melted keep adding in cheese until completely incorporated into sauce.

Make sure you do not cook this sauce too fast or a skin will form on top of the sauce. It does not really effect the taste but it will effect the presentation. Also I strongly suggest you purchase high quality parmesan cheese from the store deli.

When you cook the sauce I tip the pan before I add the next little bit of cheese to make sure it has completely melted. If you add all of the cheese in the heavy whipping cream at one time, the two ingredients will not incorporate.
