Bourbon Molasses Chicken

1 tablespoon light olive oil
2 shallots thinly sliced
2 garlic cloves sliced
1 cup Ketchup
1/4 cup Molasses
1/4 cup Balsamic vinegar
1/4 cup Bourbon


IIn a sauce pan over medium heat, put in 1 tablespoon of light olive oil. When the oil gets warm, pour in the thinly sliced shallots, and stir to keep from burning. In the last minute place the sliced garlic in the pan with the shallots and stir from 1 minute.

Pour in the ketchup, molasses, Balsamic vinegar, and Bourbon then whisk together until thoroughly combined. Turn the heat down to low, and simmer for a minimum of 15 minutes keeping the pan covered. This will concentrate the flavors of the ingredients.

Season you chicken as desired. Either by grilling the chicken on a BBQ pit or covered with foil in the oven until the chicken reaches 170 Degrees. Brush the sauce on the chicken in the last minute. Remove the chicken from the grill, and let rest for 5 minutes before serving.


The one of the key steps here is to watch the shallots because they burn easily.  You want to achieve a slight brown while making them soft.  When you cook with garlic in oil over heat you have to watch it closely to not burn.  When garlic burns it gets sticky and taste bitter.  Lastly, when you cook with alcohol, you burn off most if not all of it.  However, you can control the rate of evaporation by either covering and by heat.  Learning how to use both methods is a secret to making a great BBQ sauce.
